Il resto della mia esperienza l&#039;ho acquisita lavorando in vari ristoranti.<\/p><p class=\"p3\"><b>Da quanto tempo lavori presso Tapas \/ Aragma?<span class=\"Apple-converted-space\">\u00a0 <\/span><\/b><\/p><p class=\"p3\">Ho iniziato a lavorare da Tapas come chef nel 2017, poi quando il vecchio capo chef Lou se n&#039;\u00e8 andato alla fine del 2020, mi \u00e8 stato offerto il posto di capo chef. Che ho accettato con gratitudine.<\/p><p class=\"p3\"><b>Cosa ti ha spinto a diventare chef? <\/b><\/p><p class=\"p3\">Da bambina ho iniziato a cucinare per me e per mia sorella maggiore quando i miei genitori lavoravano. Mia sorella mi sorvegliava per assicurarsi che non bruciassi la cucina. Ma \u00e8 stato allora che ho iniziato a sperimentare sapori e modi diversi di preparare il cibo. Mi piaceva passare il tempo in cucina.<\/p><p class=\"p3\">Pi\u00f9 tardi, quando ero nell&#039;esercito (come tutti devono fare in Grecia), quando assegnarono i diversi ruoli, mi offrii volontario per essere uno dei cuochi, un ruolo che la maggior parte delle persone era desiderosa di evitare. Ma pensai perch\u00e9 no, cos\u00ec alzai la mano per la posizione di secondo chef.<\/p><p class=\"p3\">C&#039;era molta pressione. Dovevamo preparare colazione, pranzo e cena per circa 2.000 militari ogni giorno. Se per cena c&#039;era pollo, dovevamo cucinarne circa 500. Era un duro lavoro, e lunghe ore. Ma in tutta onest\u00e0, era una bella sensazione sentire che i miei colleghi apprezzavano il cibo che avevamo preparato per loro.<\/p><p class=\"p3\">Un&#039;altra delle mie motivazioni per diventare chef era perch\u00e9 volevo viaggiare. Pensavo di poter viaggiare e acquisire esperienza preziosa lungo il cammino. Dove trovi l&#039;ispirazione? <\/b><\/p><p class=\"p3\">Per Aragma ho pensato ai piatti classici greci che ho a casa e ho sfogliato alcuni dei miei numerosi libri di ricette per trovare spunti.<\/p><p>Volevo sperimentare con i piatti tradizionali, dando loro un tocco moderno. Ad esempio, sapevo che se aggiungi il t\u00e8 nero quando prepari una salsa di pomodoro, ottieni un sapore unico.<\/p><p class=\"p3\">Quindi l&#039;ho usato come parte del piatto Beef Shank, che \u00e8 un piatto tradizionale, servito su una purea di melanzane affumicate. \u00c8 un piatto di cui sono orgoglioso.<\/p><p class=\"p3\">Combinando sapori e consistenze inaspettate nei piatti puoi creare qualcosa di veramente diverso e interessante se sei disposto a prenderti il tempo di sperimentare.<\/p><p class=\"p3\"><b>Qual \u00e8 stata la sfida pi\u00f9 grande nel creare da zero un men\u00f9 completamente nuovo per Aragma? (restrizioni alimentari? reperimento degli ingredienti? costi? dessert? specialit\u00e0?) <\/b><\/p><p class=\"p3\">La creazione del men\u00f9 \u00e8 stata davvero facile, in quanto si trattava di piatti della mia infanzia e cose che conosco; piatti tradizionali che ho solo rivisitato in modo un po&#039; diverso. \u00c8 stato un processo lungo. Ma onestamente non l&#039;ho trovato particolarmente impegnativo, mi \u00e8 piaciuto.<\/p><p class=\"p3\">Onestamente, la parte pi\u00f9 impegnativa \u00e8 stata allestire la cucina. Dopo averla smontata completamente, era una tela completamente bianca e ora aveva una forma diversa, quindi \u00e8 stata una ristrutturazione completa. Abbiamo dovuto capire dove mettere la stazione calda, la stazione fredda e come sfruttare al meglio lo spazio il pi\u00f9 possibile entro lo spazio che avevamo. E con la limitazione che avevamo con dove dovevano andare il gas e le cappe aspiranti.<\/p><p class=\"p3\"><b>Qual \u00e8 il tuo piatto preferito nel menu? E perch\u00e9? Pu\u00f2 essere sia da preparare che da mangiare. <\/b><\/p><p class=\"p3\">Per mangiare, mi dispiace ma preferisco mangiare in altri posti, dove non ho cucinato io il cibo. Se cucini e assaggi tutti i piatti ogni giorno, non hai davvero voglia di mangiarli come un pasto.<\/p><p class=\"p3\">Per preparare il mio piatto preferito c&#039;\u00e8 lo stinco di manzo.<\/p><p class=\"p3\">In ogni caso, adoro il sorbetto al limone e basilico del nostro men\u00f9.<\/p><p class=\"p3\"><b>Qual \u00e8 l&#039;ingrediente che preferisci e con cui ti piace lavorare? <\/b><\/p><p class=\"p3\">Al momento sono i brodi che facciamo. Il brodo di pesce e il brodo di manzo. Sono la base di molti piatti e possono avere un effetto enorme sul sapore finale delle cose.<\/p><p class=\"p3\"><b>Ricevi un sacco di commenti adorabili dai clienti ogni sera. Qual \u00e8 il complimento pi\u00f9 bello che hai ricevuto? <\/b><\/p><p class=\"p3\"><i>Alex \u00e8 diventato tutto timido e non voleva davvero rispondere. Sono la mia ispirazione per i Gyros tacos del menu Aragma.<\/p><p class=\"p3\"><b>Qual \u00e8 stato l&#039;ultimo posto in cui hai mangiato benissimo? <\/b><\/p><p class=\"p3\">Probabilmente da qualche parte in Vietnam. Abbiamo trovato un posto che aveva del pesce fantastico, era economico, fresco e davvero ben preparato.<\/p><p class=\"p3\">Siamo andati anche in un ottimo ristorante greco nelle Filippine che faceva dei fantastici tacos di gyros. Lo so, di nuovo con i tacos.<\/p><p class=\"p3\">Mi piace molto la cucina giapponese e asiatica. Ma credo che invecchiando mi sento attratto dalle mie radici, dalla cucina greca mediterranea. Credo di aver chiuso il cerchio, volevo provare tutte le altre cucine del mondo. Poi ho capito che il cibo con cui sono cresciuto ha cos\u00ec tanto da offrire, fresco, non elaborato e pieno di sapore.
