Si vous avez mang\u00e9 chez Tapas entre 2017 et 2023, vous avez s\u00fbrement appr\u00e9ci\u00e9 certaines des merveilleuses cr\u00e9ations d\u2019Alex. Et cette ann\u00e9e, il a eu l\u2019occasion de d\u00e9couvrir sa cuisine natale.<\/p><p class=\"p3\">Comme tous les plats sont faits maison, l&#039;\u00e9quipe de cuisine a beaucoup \u00e0 faire. <\/b><\/p><p class=\"p3\">Je suis chef depuis environ 15 ans.<\/p><p class=\"p3\"><b>O\u00f9 avez-vous suivi votre formation de chef ? <\/b><\/p><p class=\"p3\">J&#039;ai suivi des cours dans une \u00e9cole priv\u00e9e de cuisine \u00e0 Ath\u00e8nes \u00e0 l&#039;\u00e2ge de 18 ans. J&#039;ai acquis le reste de mon exp\u00e9rience en travaillant dans diff\u00e9rents restaurants.<\/p><p class=\"p3\"><b>Depuis combien de temps travaillez-vous chez Tapas \/ Aragma ?<span class=\"Apple-converted-space\">\u00a0 <\/span><\/b><\/p><p class=\"p3\">J&#039;ai commenc\u00e9 \u00e0 travailler chez Tapas en tant que chef en 2017, puis lorsque l&#039;ancien chef Lou est parti fin 2020, on m&#039;a propos\u00e9 le poste de chef de cuisine. Ce que j&#039;ai accept\u00e9 avec gratitude.<\/p><p class=\"p3\"><b>Qu\u2019est-ce qui vous a pouss\u00e9 \u00e0 devenir chef ? <\/b><\/p><p class=\"p3\">Quand j&#039;\u00e9tais enfant, j&#039;ai commenc\u00e9 \u00e0 cuisiner pour moi et ma grande s\u0153ur lorsque mes parents travaillaient. Ma s\u0153ur veillait sur moi pour s&#039;assurer que je ne br\u00fble pas la cuisine. Mais c&#039;est \u00e0 ce moment-l\u00e0 que j&#039;ai commenc\u00e9 \u00e0 exp\u00e9rimenter de nouvelles saveurs et de nouvelles fa\u00e7ons de pr\u00e9parer les aliments. J&#039;aimais passer du temps dans la cuisine.<\/p><p class=\"p3\">Plus tard, lorsque j&#039;\u00e9tais \u00e0 l&#039;arm\u00e9e (comme tout le monde en Gr\u00e8ce), lorsqu&#039;on a assign\u00e9 les diff\u00e9rents r\u00f4les, je me suis port\u00e9 volontaire pour \u00eatre l&#039;un des cuisiniers, un r\u00f4le que la plupart des gens voulaient \u00e9viter. Mais je me suis dit pourquoi pas, alors j&#039;ai lev\u00e9 la main pour le poste de deuxi\u00e8me chef.<\/p><p class=\"p3\">La pression \u00e9tait \u00e9norme. Nous devions pr\u00e9parer le petit-d\u00e9jeuner, le d\u00e9jeuner et le d\u00eener pour environ 2 000 militaires chaque jour. Si nous devions pr\u00e9parer du poulet pour le d\u00eener, nous devions en cuisiner environ 500. C&#039;\u00e9tait un travail difficile et de longues heures. Mais en toute honn\u00eatet\u00e9, c&#039;\u00e9tait agr\u00e9able d&#039;entendre que mes coll\u00e8gues appr\u00e9ciaient la nourriture que nous leur avions pr\u00e9par\u00e9e.<\/p><p class=\"p3\">L\u2019une de mes autres motivations pour devenir chef \u00e9tait mon envie de voyager. Je pensais que je pourrais voyager et acqu\u00e9rir une exp\u00e9rience pr\u00e9cieuse en cours de route. O\u00f9 trouvez-vous votre inspiration ? <\/b><\/p><p class=\"p3\">Pour Aragma, j&#039;ai pens\u00e9 aux plats grecs classiques de chez moi et j&#039;ai parcouru certains de mes nombreux livres de recettes pour trouver des id\u00e9es.<\/p><p>J&#039;avais envie d&#039;exp\u00e9rimenter des plats traditionnels en leur apportant une touche de modernit\u00e9. Par exemple, je savais que si on ajoute du th\u00e9 noir \u00e0 une sauce tomate, on obtient une saveur unique.<\/p><p class=\"p3\">J&#039;ai donc utilis\u00e9 cela dans le plat de jarret de b\u0153uf, qui est un plat traditionnel, servi sur une pur\u00e9e d&#039;aubergines fum\u00e9es. C&#039;est un plat dont je suis fier.<\/p><p class=\"p3\">En combinant des saveurs et des textures inattendues dans les plats, vous pouvez cr\u00e9er quelque chose de vraiment diff\u00e9rent et int\u00e9ressant si vous \u00eates pr\u00eat \u00e0 prendre le temps d&#039;exp\u00e9rimenter.<\/p><p class=\"p3\"><b>Quel a \u00e9t\u00e9 pour vous le plus grand d\u00e9fi dans la cr\u00e9ation d&#039;un tout nouveau menu pour Aragma \u00e0 partir de z\u00e9ro ? (Restrictions alimentaires ? Approvisionnement en ingr\u00e9dients ? Co\u00fbts ? Desserts ? Sp\u00e9cialit\u00e9s ?) <\/b><\/p><p class=\"p3\">La cr\u00e9ation du menu a \u00e9t\u00e9 assez facile en fait, car il s&#039;agissait de plats de mon enfance et de choses que je connaissais, des plats traditionnels que j&#039;ai simplement pr\u00e9par\u00e9s un peu diff\u00e9remment. C&#039;\u00e9tait un long processus. Mais honn\u00eatement, je n&#039;ai pas vraiment trouv\u00e9 cela difficile, j&#039;ai appr\u00e9ci\u00e9.<\/p><p class=\"p3\">Honn\u00eatement, la partie la plus difficile a \u00e9t\u00e9 d&#039;am\u00e9nager la cuisine. Apr\u00e8s avoir d\u00e9moli toute la cuisine, elle \u00e9tait compl\u00e8tement vierge et avait maintenant une forme diff\u00e9rente, il s&#039;agissait donc d&#039;une r\u00e9novation compl\u00e8te. Il fallait d\u00e9terminer o\u00f9 placer la station chaude, la station froide et comment utiliser au mieux l&#039;espace dans les limites de l&#039;espace dont nous disposions. Et avec la limitation que nous avions concernant l&#039;emplacement du gaz et des hottes.<\/p><p class=\"p3\"><b>Quel est votre plat pr\u00e9f\u00e9r\u00e9 au menu ? Et pourquoi ? Il peut \u00eatre \u00e0 pr\u00e9parer ou \u00e0 manger. <\/b><\/p><p class=\"p3\">Pour manger, d\u00e9sol\u00e9e mais je pr\u00e9f\u00e8re manger ailleurs, o\u00f9 je n&#039;ai pas cuisin\u00e9 les plats. Si tu fais et go\u00fbtes tous les plats tous les jours, tu n&#039;as pas vraiment envie de les manger en tant que repas.<\/p><p class=\"p3\">Pour r\u00e9aliser mon plat pr\u00e9f\u00e9r\u00e9, c&#039;est le jarret de b\u0153uf.<\/p><p class=\"p3\">J&#039;adore cependant le sorbet au citron et au basilic de notre menu.<\/p><p class=\"p3\"><b>Quel est votre ingr\u00e9dient pr\u00e9f\u00e9r\u00e9 avec lequel vous aimez travailler ? <\/b><\/p><p class=\"p3\">En ce moment, nous pr\u00e9parons des bouillons. Le bouillon de fruits de mer et le bouillon de b\u0153uf. Ils constituent la base de nombreux plats et peuvent avoir un effet consid\u00e9rable sur la saveur finale des aliments.<\/p><p class=\"p3\"><b>Vous recevez chaque soir de nombreux commentaires \u00e9logieux de la part de vos clients. Quel est le plus beau compliment que vous ayez re\u00e7u ? <\/b><\/p><p class=\"p3\"><i>Alex est devenu un peu timide et n&#039;a pas vraiment voulu r\u00e9pondre. Mais croyez-moi, il a re\u00e7u d&#039;innombrables commentaires \u00e9logieux de la part des clients des deux restaurants au fil des ans. Nous avons trouv\u00e9 un endroit qui proposait des fruits de mer incroyables, bon march\u00e9, frais et vraiment bien pr\u00e9par\u00e9s.<\/p><p class=\"p3\">Nous sommes \u00e9galement all\u00e9s dans un super restaurant grec aux Philippines qui faisait des tacos gyros fantastiques. Mais je pense qu&#039;en vieillissant, je me suis sentie attir\u00e9e par mes racines grecques et m\u00e9diterran\u00e9ennes.
