<\/b><\/p><p class=\"p3\">Soy chef desde hace unos 15 a\u00f1os.<\/p><p class=\"p3\"><b>\u00bfD\u00f3nde te formaste como chef? <\/b><\/p><p class=\"p3\">Fui a una escuela privada de cocina en Atenas cuando ten\u00eda 18 a\u00f1os. El resto de mi experiencia la adquir\u00ed trabajando en varios restaurantes.<\/p><p class=\"p3\"><b>\u00bfCuanto tiempo llevas trabajando en Tapas\/Aragma?<span class=\"Apple-converted-space\">\u00a0 <\/span><\/b><\/p><p class=\"p3\">Empec\u00e9 a trabajar en Tapas como chef en 2017 y, cuando el antiguo jefe de cocina, Lou, se fue a finales de 2020, me ofrecieron el puesto de jefe de cocina, que acept\u00e9 con gratitud.<\/p><p class=\"p3\"><b>\u00bfQu\u00e9 fue lo que te inspir\u00f3 a convertirte en chef? <\/b><\/p><p class=\"p3\">Cuando era ni\u00f1a, empec\u00e9 a cocinar para m\u00ed y para mi hermana mayor cuando mis padres trabajaban. Mi hermana me vigilaba para asegurarse de que no incendiara la cocina. Pero fue entonces cuando empec\u00e9 a experimentar con sabores y diferentes formas de preparar la comida. Disfrutaba pasar tiempo en la cocina.<\/p><p class=\"p3\">M\u00e1s tarde, cuando estaba en el ej\u00e9rcito (como todo el mundo en Grecia), cuando estaban asignando los diferentes roles, me ofrec\u00ed como voluntario para ser uno de los cocineros, un papel que la mayor\u00eda deseaba evitar. Pero pens\u00e9, \u00bfpor qu\u00e9 no?, as\u00ed que levant\u00e9 la mano para el puesto de segundo chef.<\/p><p class=\"p3\">Hab\u00eda mucha presi\u00f3n. Ten\u00edamos que preparar el desayuno, el almuerzo y la cena para unos 2.000 miembros del ej\u00e9rcito cada d\u00eda. Si hab\u00eda que cenar pollo, ten\u00edamos que cocinar unos 500 pollos. Era un trabajo duro y muchas horas. Pero, sinceramente, era una sensaci\u00f3n agradable saber que mis compa\u00f1eros disfrutaban de la comida que les hab\u00edamos preparado.<\/p><p class=\"p3\">Otra de mis motivaciones para ser chef fue que quer\u00eda viajar. Pens\u00e9 que podr\u00eda viajar y adquirir experiencia valiosa en el camino. Por ejemplo, sab\u00eda que si le agregas t\u00e9 negro a una salsa de tomate, le da un sabor \u00fanico.<\/p><p class=\"p3\">As\u00ed que lo utilic\u00e9 como parte del plato de pierna de ternera, que es un plato tradicional, servido sobre pur\u00e9 de berenjena ahumada. Es un plato del que estoy orgulloso.<\/p><p class=\"p3\">Al combinar sabores y texturas inesperados en tus platos, puedes crear algo realmente diferente e interesante si est\u00e1s dispuesto a tomarte el tiempo para experimentar.<\/p><p class=\"p3\"><b>\u00bfQu\u00e9 fue lo m\u00e1s desafiante para usted al crear un men\u00fa completamente nuevo para Aragma desde cero? (\u00bfRestricciones diet\u00e9ticas? \u00bfObtenci\u00f3n de ingredientes? \u00bfCostos? \u00bfPostres? \u00bfEspecialidades?) <\/b><\/p><p class=\"p3\">La creaci\u00f3n del men\u00fa fue bastante f\u00e1cil, ya que se trataba de platos de mi infancia y cosas que conozco; platos tradicionales que prepar\u00e9 de una manera un poco diferente. Fue un proceso largo, pero honestamente no lo encontr\u00e9 realmente desafiante, lo disfrut\u00e9.<\/p><p class=\"p3\">Sinceramente, la parte m\u00e1s complicada fue montar la cocina. Despu\u00e9s de haber derribado toda la cocina, era un lienzo completamente en blanco y ahora ten\u00eda una forma diferente, por lo que fue una renovaci\u00f3n completa. Puede ser para preparar o para comer. <\/b><\/p><p class=\"p3\">Para comer, lo siento, pero prefiero comer en otros lugares, donde no he cocinado yo la comida. Si preparas y pruebas todos los platos todos los d\u00edas, no tienes muchas ganas de comerlos como comida.<\/p><p class=\"p3\">Mi plato favorito para hacer es la pierna de ternera.<\/p><p class=\"p3\">Aunque me encanta el sorbete de lim\u00f3n y albahaca de nuestro men\u00fa.<\/p><p class=\"p3\"><b>\u00bfCu\u00e1l es tu ingrediente favorito con el que te encanta trabajar? <\/b><\/p><p class=\"p3\">En este momento, lo que hacemos son los caldos, el de marisco y el de carne. Son la base de muchos platos y pueden tener un gran efecto en el sabor final de los platos.<\/p><p class=\"p3\"><b>Recibes muchos comentarios agradables de los clientes todas las noches. \u00bfCu\u00e1l es el mejor cumplido que has recibido? <\/b><\/p><p class=\"p3\"><i>Alex se puso t\u00edmido y no quer\u00eda responder. Es mi plato favorito.<\/p><p class=\"p3\"><b>\u00bfCu\u00e1l es tu placer culposo en cuanto a comida? <\/b><\/p><p class=\"p3\">Cuando estoy en casa, no puedo resistirme a la Souvlakia, que es un kebab griego tradicional. Como muchos de ellos cuando estoy en casa, quiz\u00e1s demasiados. Son mi inspiraci\u00f3n para los tacos de gyros del men\u00fa de Aragma.<\/p><p class=\"p3\"><b>\u00bfCu\u00e1l fue el \u00faltimo lugar donde disfrutaste de una excelente comida? <\/b><\/p><p class=\"p3\">Probablemente en alg\u00fan lugar de Vietnam. Encontramos un lugar que ten\u00eda unos mariscos incre\u00edbles, baratos, frescos y muy bien preparados.<\/p><p class=\"p3\">Tambi\u00e9n fuimos a un restaurante griego estupendo en Filipinas que hac\u00eda unos tacos de gyros fant\u00e1sticos. Lo s\u00e9, otra vez con los tacos.<\/p><p class=\"p3\">Disfruto mucho de la cocina japonesa y asi\u00e1tica, pero creo que a medida que me hago mayor vuelvo a mis ra\u00edces, la cocina mediterr\u00e1nea griega.
