<\/b><\/p><p class=\"p3\">Ich bin seit ungef\u00e4hr 15 Jahren Koch.<\/p><p class=\"p3\"><b>Wo haben Sie Ihre Ausbildung zum Koch absolviert? <\/b><\/p><p class=\"p3\">Mit 18 Jahren besuchte ich eine private Kochschule in Athen. Den Rest meiner Erfahrung sammelte ich bei der Arbeit in verschiedenen Restaurants.<\/p><p class=\"p3\"><b>Wie lange arbeiten Sie schon bei Tapas \/ Aragma?<span class=\"Apple-converted-space\">\u00a0 <\/span><\/b><\/p><p class=\"p3\">Ich begann 2017 als Koch bei Tapas zu arbeiten. Als der alte K\u00fcchenchef Lou Ende 2020 ging, wurde mir die Stelle des K\u00fcchenchefs angeboten. Diese habe ich dankbar angenommen.<\/p><p class=\"p3\"><b>Was hat Sie urspr\u00fcnglich dazu inspiriert, Koch zu werden? <\/b><\/p><p class=\"p3\">Als Kind begann ich, f\u00fcr mich und meine gro\u00dfe Schwester zu kochen, wenn meine Eltern arbeiteten. Meine Schwester passte auf mich auf, damit ich die K\u00fcche nicht abbrannte. Aber damals begann ich zum ersten Mal, mit Aromen und verschiedenen Zubereitungsarten zu experimentieren. Ich verbrachte gern Zeit in der K\u00fcche.<\/p><p class=\"p3\">Sp\u00e4ter, als ich in der Armee war (wie das jeder in Griechenland tun muss), habe ich mich bei der Rollenverteilung freiwillig als Koch gemeldet, eine Rolle, die die meisten gern vermeiden wollten. Aber ich dachte, warum nicht, und meldete mich f\u00fcr die Stelle des zweiten Kochs.<\/p><p class=\"p3\">Der Druck war gro\u00df. Wir mussten jeden Tag Fr\u00fchst\u00fcck, Mittag- und Abendessen f\u00fcr rund 2.000 Armeeangeh\u00f6rige zubereiten. Wenn es H\u00fchnchen zum Abendessen gab, mussten wir rund 500 H\u00fchner kochen. Es war harte Arbeit und viele Stunden. Aber ganz ehrlich, es war ein sch\u00f6nes Gef\u00fchl zu h\u00f6ren, dass meinen Kollegen das Essen schmeckte, das wir f\u00fcr sie zubereitet hatten.<\/p><p class=\"p3\">Einer meiner weiteren Beweggr\u00fcnde, Koch zu werden, war, dass ich reisen wollte. Ich dachte, ich k\u00f6nnte reisen und dabei wertvolle Erfahrungen sammeln. Woher nehmen Sie Ihre Inspiration? <\/b><\/p><p class=\"p3\">F\u00fcr Aragma habe ich \u00fcber klassische griechische Gerichte aus meiner Heimat nachgedacht und einige meiner zahlreichen Kochb\u00fccher nach Ideen durchgesehen.<\/p><p>Ich wollte mit traditionellen Gerichten experimentieren und ihnen eine moderne Note verleihen. Ich wusste zum Beispiel, dass eine Tomatensauce durch Zugabe von schwarzem Tee einen ganz besonderen Geschmack erh\u00e4lt.<\/p><p class=\"p3\">Also habe ich es als Teil des Rinderhaxengerichts verwendet, einem traditionellen Gericht, das auf einem ger\u00e4ucherten Auberginenp\u00fcree serviert wird. Es ist ein Gericht, auf das ich stolz bin.<\/p><p class=\"p3\">Durch die Kombination unerwarteter Aromen und Texturen in Gerichten k\u00f6nnen Sie etwas wirklich Anderes und Interessantes schaffen, wenn Sie bereit sind, sich die Zeit zum Experimentieren zu nehmen.<\/p><p class=\"p3\"><b>Was war f\u00fcr Sie die gr\u00f6\u00dfte Herausforderung bei der Erstellung eines komplett neuen Men\u00fcs f\u00fcr Aragma? (Di\u00e4tvorschriften? Beschaffung der Zutaten? Kosten? Desserts? Spezialit\u00e4ten?) <\/b><\/p><p class=\"p3\">Die Erstellung des Men\u00fcs war eigentlich ziemlich einfach, da es Gerichte aus meiner Kindheit und Dinge waren, die ich kenne; traditionelle Gerichte, die ich nur ein bisschen anders zubereitet habe. Es war ein langer Prozess. Aber ehrlich gesagt fand ich es nicht wirklich herausfordernd, es hat mir Spa\u00df gemacht.<\/p><p class=\"p3\">Ehrlich gesagt war die gr\u00f6\u00dfte Herausforderung, die K\u00fcche einzurichten. Nachdem wir die gesamte K\u00fcche herausgerissen hatten, war sie eine komplett leere Leinwand und hatte jetzt eine andere Form, also war es eine komplette Renovierung. Wir mussten herausfinden, wo wir die Warmhalte- und die Kalthaltestation hinstellen und wie wir den Platz im vorhandenen Raum am besten nutzen konnten. Und wir mussten uns \u00fcberlegen, wo Gasherde und Dunstabzugshauben hin mussten.<\/p><p class=\"p3\"><b>Welches ist Ihr Lieblingsgericht auf der Speisekarte? Und warum? Es kann entweder zum Zubereiten oder zum Essen sein. <\/b><\/p><p class=\"p3\">Zum Essen, tut mir leid, aber ich esse lieber an anderen Orten, wo ich das Essen nicht gekocht habe. Wenn man alle Gerichte jeden Tag zubereitet und probiert, hat man nicht wirklich das Verlangen, sie als Mahlzeit zu essen.<\/p><p class=\"p3\">Mein Lieblingsgericht ist die Rinderhaxe.<\/p><p class=\"p3\">Ich liebe jedoch das Zitronen-Basilikum-Sorbet von unserer Speisekarte.<\/p><p class=\"p3\"><b>Was ist Ihre Lieblingszutat, mit der Sie gerne arbeiten? <\/b><\/p><p class=\"p3\">Im Moment sind es die Br\u00fchen, die wir zubereiten. Die Meeresfr\u00fcchtebr\u00fche und die Rinderbr\u00fche. Sie bilden die Grundlage vieler Gerichte und k\u00f6nnen den endg\u00fcltigen Geschmack der Gerichte stark beeinflussen.<\/p><p class=\"p3\"><b>Sie erhalten jeden Abend viele nette Kommentare von Kunden. Was ist das sch\u00f6nste Kompliment, das Sie je bekommen haben? <\/b><\/p><p class=\"p3\"><i>Alex war hier ganz sch\u00fcchtern und wollte nicht wirklich antworten. Aber glauben Sie mir, er hat im Laufe der Jahre unz\u00e4hlige wunderbare Kommentare von Kunden beider Restaurants erhalten.
